I made these yesterday morning and they were...Whew! I made these yesterday morning and they were fantastic. However, there was a moment of panic. My last batch of muffins (different recipe) turned out a wee bit..."firm", so I was paranoid about entering the muffin zone again. (Fred said I could market my muffins as both food and dental hygiene product, since they were hard enough to scrape the plaque off your teeth as you ate them...ha ha ha, very funny). <br /><br />So I watched these ones like a hawk and took them out of the oven the second my toothpick came out clean. Fred was the first to try one and said, "Oh great, now you've undercooked them!"<br /><br />PANIC! <br /><br />I should have known he was teasing me. :(<br /><br />Anyway, they were delicious and my reputation has been saved.
