Twice Baked Potato Casserole

Pictured behind the potatoes is a suuuuper good Cheesy Corn Pudding that I want to post the recipe for
but I can't find the recipe for.   That's the whole reason that I have this blog - to be able to archive recipes for later use!
Quelle frustration!  Let's focus on this not-in-focus picture of potatoes instead.

This is just a no-brainer!  Because: mashed potatoes with bacon, sour cream, cheese, green onions, and butter.  We ate this as our potato side dish for Christmas dinner last year, and not only would it make a great holiday dinner side dish again, but it would be a great non-holiday dinner side dish too.  Whoa.  As the name suggests, it's like twice baked double stuffed potatoes, but in a casserole.  If you ask the hubby really nicely, he will even fry up the leftovers for breakfast potatoes the next morning.  Drool.  Only rivalled by one other mashed potato recipe for the best mashed potatoes everrrrr.

Twice Baked Potato Casserole

Serves: 16

Ingredients
  • 1 pound bacon
  • 16 russet potatoes, scrubbed clean (don't peel)
  • 6 tablespoons olive oil
  • 1 pound salted butter, at room temperature
  • 2 cups sour cream
  • 2 cups grated Cheddar cheese
  • 2 cups whole milk
  • 4 teaspoons seasoning salt
  • 6 green onions, sliced
  • Kosher salt and freshly ground pepper, to taste.
Directions
Preheat the oven to 400°F.

Cook the bacon in a pan until crispy; let cool and then crumble.

Rub potatoes with olive oil and place on baking sheets.  Bake until tender, 45 to 60 minutes.  Remove the potatoes from the oven and reduce the oven temperature to 350°F.

Slice the butter and transfer to a large mixing bowl.  Add the bacon and the sour cream.  Cut each potato in half and scrape out the insides into the mixing bowl.  Tear up the skins from 3 of the potatoes and add to the bowl.  Mash the potatoes with a potato masher, then add the cheese, milk, seasoning salt, green onions, and salt and pepper to taste.  Mix together well.

Grease a baking dish, and scoop the potato mixture into the dish, then top with more grated cheese.  Bake until warmed through, about 25 to 30 minutes.

Warm Potato Salad (Earls Restaurant Copycat Recipe)

You know the Warm Potato Salad from Earls Restaurant?  The one that I sometimes dream about?

I think this is it.

To figure out how to make the Warm Potato Salad, I had to go to Earls Restaurant (twice, or maybe three times) to do a little 'research.'  While doing the recon (more than once, just to be sure), I got to hang out with friends and drink wine and eat delicious potato salad.  It was a very labour intensive education process, as you can imagine.  Here is what I learned:

1)  Huge pieces of bacon are necessary.  You can't just have little bits of bacon in this salad, you need a large mouthful of bacon.  Also, if a little bit of bacon grease happens to accidentally spill into the dressing, that is not a problem and people will like this salad and you more.

2)  Roast that *#@$!  Roasted corn and roasted baby potatoes and roasted garlic are key.  Flavour central.

3) Dill is such a great herb.  Sour cream is such a great dairy product.


  
4) This is really not a salad at all.

Souper Sunday #17: Low-Fat Chicken Pot Pie Soup

This soup totally tastes like you are eating the inside of a chicken pot pie, but with a spoon, and with the type of reckless abandon that I normally reserve for things that are not low-fat at all.

Bonus points if you go to the additional effort of making a puff pastry topping to dip into the soup.  That would be amazing.

The Hubby has been asking me to make him chicken stew for a few years or weeks now, and so I finally caved and made it for him today.  Only, chicken stew is so not what my waistline needs right now, so instead I cheated and made this Low-Fat Chicken Pot Pie Soup from the Skinny Taste website. (with a few small tweaks),  He took it to work for lunch, and isn't home yet so I haven't been able to hound him about how he liked it.  But, speaking for myself, "Daaaaaaaaaamn."  You would not even know that this was made with skim milk and without the addition of any butter or oil.  At about 250 calories for a 1 1/2 cup bowl, it's a super filling lunch or dinner that won't totally demolish your calorie allotment for the day.  I especially like that fact today, since I really need to get back on track with eating healthier after eating 'a lot' of the Cookies and Cream Cheesecake Bars last week.  I can't even talk about those bars because it makes me think about those bars which makes me want to go to the store and buy the ingredients for those bars which makes me want to eat almost the entire pan of those bars again.

Souper Sunday #11: Classic Beef Stew

Baby, it's (still) cold outside, and this stew felt like the perfect supper today.  Is this a soup?  No, but in my books it's close enough to qualify for Souper Sunday status!

What a great weekend I've had!  Yesterday my awesome mother treated me to lunch and a spa day as a birthday present.  We got facials,  and then I got a massage while she was getting a manicure.  It was so, so nice, and such a treat since the two of us are not really spa types normally.  The spa that we went to was in the mall, so we popped into a few stores, including the bathing suit store for a total of two whole minutes...after just having had a lunch (with wine) and spa day everything in there just looked really...tight.  I'm going to Las Vegas with some friends at the end of this month (And. I. Can't. Freaking. Wait.), so the time came today to go back to the bathing suit store from yesterday and pick out a new bikini.

This potato dish has been a constant at my family's holiday dinners since I was but a young girl first developing an early preference for salty over sweet.  It is the best.  And really, that makes sense when you read the ingredients listing.  Mashed potatoes with cream cheese, sour cream, and butter?  Hello!  I'll take a third helping please.

Bacon Hasselback Potatoes

What does Hasselback mean, you ask?  I had no clue either, so I looked it up, and...
Blurry potatoes.  Culprit below.
 ...despite my sometimes extremely impressive Googling skills, I didn't find much, other than that the name comes from some restaurant that they originated from in Sweden.  Boring.  They kind of look like  a loaf of sliced bread to me (Mmmmm....bread. No!  That's not very gluten-free, Megan!)

This recipe comes from my new November 2012 Food Network Magazine.  Basically, bacon + potatoes + boatloads of butter = really great side dish.  Beware the cooking time; I didn't realize that they take two hours to bake until it was too late.
