Caesar Salad

This is my go-to Caesar salad recipe, to be enjoyed with everything from burgers to lasagna to steak. Tonight we ate it as an accompaniment to Chicken Parmesan. I tend to go a little crazy on the garlic in my Caesar salads, but the actual recipe calls for 1 clove...free free to add an extra clove like I do!


Caesar Salad

Ingredients
1 garlic clove, minced
1/3 cup oil
salt and fresh ground pepper, to taste
1/4 tsp. dry mustard
1 1/2 tsp. Worcestershire sauce
1 1/2 tsp. anchovy paste
1 egg
1 - 2 tbsp. fresh lemon juice
Large head romaine lettuce
Freshly grated parmesan cheese
Croutons

Directions
Blenderize all ingredients except lettuce (that would be hilarious though!), parmesan cheese, and croutons. Wash and tear romaine lettuce into bite-sized pieces. Toss lettuce with dressing. Sprinkle on parmesan cheese and croutons. Toss again. Enjoy!

Megan's Review: Go-to recipe. Always good.
The Hubby's Review: Great home-made dressing. He prefers it with the normal (1 clove) garlic level.

  1. It's all about the anchovies. Use the paste ans serve with extra anchovy filets on the side for a little extra pizazz!
